Abstract: Various results are presented which realize the thermal action, the duration of the process of maximum purification, the characteristics of raw materials in the air of purification of Jerusalem artichoke. Mathematical models of the process of the thermal human process of tubers of Jerusalem artichoke by steam were obtained. Mathematical models have been proposed to test the effective cleaning of Jerusalem artichoke for those who use purified Jerusalem artichoke tubers and known syrups for mass action.
